The purpose is to expand the scientific knowledge base relating to the different aspects of glutamic acid and its salts with a particular emphasis on their use in foods for human beings.

Address scientific questions and concerns posed by the wider scientific community and the regulatory bodies at national and international levels (especially in the food sector) about glutamic acid and its salts with the view of offering opinions, providing data and sharing information to advance the knowledge and obtain scientific consensus on the safe use of glutamates as food ingredients.
